2021 Adelaide Hills Chardonnay

He's released 2 new wines are from a little block in Balhannah, in the Adelaide Hills that he looks after organically with a mate. It's planted to Pinot Noir and Chardonnay. The Chardonnay was picked in early March, crushed and pressed straight to old oak, fermented until dry, topped, and then left on full solids until late November without any stirring, tasting or topping. As per usual, nothing added, except a small amount of sulphur prior to bottling in December. He only squeezed out 25 dozen of this last year.
