We have very little impact on this wine’s nigh-on violent fruit expression. The fruits of the forest cherry ripe ID is exactly how it comes in from the Corsini family’s La Cantina vineyard in the King Valley. We destem and crush, vinify two weeks on skins, basket press, get it through MLF either in tank or old puncheon, rack twice and bottle. It demands you plonk it your fridge an hour then delight in its berried fragrance, bright flavours and beautiful deep magenta colour.
