Together with our good friends at Paski, we set out to create a salsa that would encapsulate everything we love about the ocean. Lacto fermented yuzu fruit, lemongrass and green chillies dance on the tongue like a salty sea breeze through the hair; perfectly complimenting the brininess of freshly shucked oysters, sweet scallops and pearlescent fish.
