Predominantly Satsumas (the famous Japanese Blood Plum), with as many Prune d’Agen as we can find ... and there is a particular tree of this variety in our immediate neighbour’s (the house of the former owner of our farm) which is wizened by time, and meagre in yield but those fruit that make the journey are absolute treasures; navy hued jet black, thick-skinned jewels with sparse flesh and huge pips and the ultimate prize attracting the keen eye of this fermenter.
