Momento Mori 2025 Someday Never Comes

This wine drinks more like a Pinot than Sangiovese. It’s got fruit up front but is predominantly savoury in character, cranberry and blackberry notes then the acid line and tannin profile really shine through. It was intentionally a low extraction ferment to keep it on the lighter, more playful side. It was aged in 90% stainless and 10% very old barrel.
