Margan Breaking Ground 2024 Cabernets

Notes from Ollie - We retrained our Cabernet Franc/Merlot block in the Spring of 2023, this means there will be none of either variety in this wine until the 2026 release. 100% Cabernet Sauvignon from the Saxonvale vineyard (SWA Certified). The high Western aspect has poorer soils than the more friable flats and thus with the afternoon sun, retains good varietal expression and structure due to small berries. Fully destemmed and fermented in medium (4T) open fermenters with twice daily pump overs for 15 days of ferment. Maturation in seasoned 500L French oak puncheons for nine months prior to bottling.
