Ancient vines aged between 80 and 100 years are planted in the Foix Natural Park and cultivated using regenerative agriculture with exceedingly low yields.
The harvest is carried out manually and selectively, and once in the winery, the grapes spontaneously ferment with indigenous yeasts, spending several days in contact with the skins. Subsequently, the wine matures over a period of 3 months in clay amphorae buried underground amidst the vine rows. Intense orange wine - notes of quince and beeswax with a gentle grip and an apple cider finish. Lenghty!
