Emerson Johns 2025 No. 2 Chardonnay

Shit hot Chardonnay made by Oliver Johns (ex-Fin) - notes are from him:
Wine is Whole bunch pressed gently. Pressings are separated. Juice chilled over night and racked to barriques, one third new oak. Slow cool ferment with a bit of stirring. Once primary fermentation finished, the wine was sulphured. No Malo. Racked to tank after 9 months and bottled in January 2026. No filtration. It was a warm and early start to the year last year. Sutherland is a great little vineyard. North Dixons creek, Foothills of the State forest. It is a south-facing vineyard that avoids the peak temps of the Yarra summer. It's a 90's own-rooted vineyard.
