Domaine Simha NV Paysan Eh Bien!

Notes from Domaine Simha, who are behind these wines..:
A floral, textural, medium bodied red banger. Spicy blueberry, charcuterie and smoky liquorice all-sorts. Pinot noir dreams. Handmade in small terracotta amphorae. Wild fermented on skins for 30+ days, whole bunch pressed and rested in ampohora for one year. Bottled unfined, unfiltered with natural balance (lightly cloudy) and minimal sulphites.
