daa_see 2024 Growing Pains

Notes from Darcy:
Picked in early March 2024, de-stemmed and fermented in a picking bin on skins for 11 days. Bled initially with slow increases of pressing to minimise tannins before moving to steel tank for 11 months. Bottled and sealed in early February 2025 and left to rest until now. ‘daa_see’ wines are made with no additions, no added preservatives, no filtration, and are crown sealed for freshness and stability as this is a living wine. I believe in making wine accessible to folks from all walks of life. For me, this means acknowledging that everyone’s palate is formed and functions differently.
