Bobar 2023 Viognier

Notes from Bobar...
Farmed on an east facing site at the base of the Christmas Hills escarpment, clay loam soils over deep clay. Hand-picked early in its ripening and development and given a gentle 7-day whole bunch maceration to build texture and weight before pressing and fermentation in seasoned French oak puncheons. Matured on lees for 6 moths before bottling without fining and filtration in Spring 2023.
