This is a field blend of Procanico, Malvasia Toscana, Verdello, Drupeggio, and Grechetto Bianco - the vineyard is full of clay soil. After picking the fruit spends 3 days on skins than pressed to finish fermentation in a steel tank, followed by another 6 months in steel. Ajola is a beautiful reality that it is impossible not to fall in love with.
