Organically grown Cabernet Franc from Jeff Traeger impeccably farmed property in Vine Vale, East of the Barossa just at the foothill of the Menglers Hill. These Old Vines are deeply rooted in the sandy over clay soils & benefit from diurnal temperature to held some acidity. Hand-picked, the Cabernet Franc was then whole bunch pressed in our screw press, nice and slow to extract some phenolics from the delicious skins of the berries. The juice was transferred into a mixture of old Barriques & Stainless Steel tank to undergo fermentation & a 8 month élevage. Bottled on site in our Basket Range winery without fining nor filtration.
