    Jean-Paul worked his first vintage in 2007 in Nuits Saint George, Burgundy.
    Hand-picked in March and pressed whole bunch, fermented in used French barriques using indigenous yeast, for maximum flavour and a lovely savoury texture. Aged in a French barriques for 3 months, then transferred to stainless to maintain freshness and acidity. The result is a flavoursome full bodied white with flavours of peaches, orange blossom and a hint of vanilla. Bottled without filtering or fining.
