All these wines are from the Yarra Valley, use old oak, wild yeast, and the only addition is sulphur. Syrah with slinky restraint. Capturing the aromatic, elegant, red fruited and spicy side of Yarra Shiraz. From a single vineyard in Wonga Park. Good lookin grapes so could handle more wholebunch. All worked very lightly- hand plunging to keep the cap wet. Wild yeast, old oak.
