Our focus with the 2021 Hills & Back Rosso was to create a vibrant yet layered wine. With 80% of the wine matured in tank and 20% in barrel. All portions where fermented separately and blended together prior to bottling. The Sangiovese came from the Turnball and Blowes Vineyard. Whilst the Barbera and Nebbiolo from the Longview Vineyard. We allowed each vineyard to express its character in fermentation and pressed post time on skins depending on flavour profile. All portion tank and barrel stayed on gross lees post MLF for 6months. Then racked and blended and allowed to settle again in tank and barrel.
Slight floral perfume on nose Complex palate, tannins from the Nebbiolo frame the fruit and alongside a good line of acid provide great travel across the palate. Fruit evident at the beginning that moves to a lovely subtle savoury finish. Acidity gives it a moreish feel.
