2022 Chardonnay

Rosnay Organic Vineyard Canowindra Chardonnay. 100% de-stemmed and wild ferment. 10 days skin contact with soft punch downs every second day. Basket pressed off into new and old french oak. Élevage on fine lees for 9 months before transferring to tank and bottled by gravity. No added sulphur, fining or filtering. Savoury and mineral with skin contact tropical tartness and new oak structure.
