Constructed for the outright pleasure of smashing friggitori, with a recipe dating back to the 1958 Sagra de Pesce in Camogli. Bianco Superiore celebrates the marriage of Vermentino, Malvasia & Trebbiano, an honest wine that sadly can no longer be found in the hedge fund cesspool that Portofino has transcended into. Fruit from the Barmera and Ebenezer DOCGs. Multiple ferments, multiple levels of maceration, multiple regions – enter the multiverse of flavour. The Fiat needs a service, but the wine is tip-top.
