A skin contact blend of 75% Sauvignon Blanc and 25% Pinot Gris.
Farmed organically though not certified and machine harvested from Hilltops, NSW. Wild fermented separately without adjustments; The Pinot Gris component remained on skins for 2 weeks in stainless steel & left to its own devices. Whilst the Sauvignon Blanc was on skins for 16 days, seeing pump overs occur twice daily for the first week, and then left to macerate for the remainder of time on skins. Both parcels were pressed, blended & returned to stainless where the resulting wine remained on lees for 5 months before bottling. Unfined, unfiltered & minimal sulphites added at closure.
