2021 Les Oeillets Blanc
Born and raised in the Savoie, Jean-Yves Péron studied winemaking in Bordeaux in the late 90’s.
After school he spent some time working for Thiery Allemand in Cornas and later with Bruno Schueller in Alsace, both of whom he considers his mentors. All fruit is organic and biodynamic. 100% Jacquère with a touch of maceration, then natural ferment in neutral oak. No fining, no filtration, and zero added SO2. Peaches and cream with a touch of thyme.
