Notes from Yoko and Andries AKA Brave New Wine!
Clones 277 and 95 hand picked 100% whole bunches were tossed into concrete open fermenters, covered with inert gas and covered to sweat and undergo carbonic maceration for two weeks before being foot stomped. 100% natural fermentation proceeded on full stalks before being pressed off and run to older French oak puncheons and barriques on full solids for 12 months before being racked to tank for to rest for a further 6 months. The wine shows a bright amber hue, with a bright lifted nose of white peaches and spiced apple crumble. The palate is structured but has a lovely balance between fresh fruit, natural acid and whole bunch tannins. Drives long with a peach iced tea finish.
