2022 Il Bruto & The Beast

The wines are produced mostly from local grape varieties found in southeast Piedmont, organically farmed, produced without additives.
This is Cortese rendered into a naturally sparkling wine, aka pet nat. Beautiful drinking here. Clean but savoury as can be, nutty, saline, slightly fino-like, some oatmeal character, but the bustling line of acidity and swish of mouth-watering tang to finish does the trick to balance.
