Monastero Suore Cistercensi is a monastery comprised of around 80 Sisters of the ‘Cistercense della Stretta Osservanza’ order – also known as the Trappist order.
The order follows the Benedictine principle of the ora et labora – pray and work. In this case the work is primarily agricultural,reflecting a philosophy of enjoying nature, without possessing it. All grapes are harvested together and co-fermented without added yeasts or temperature control. It is aged on its fine lees in steel and fiberglass tanks and bottled just before the next harvest without fining or filtering. Honeysuckle and white flowers, this is an aromatic and balanced white.
