    Jean-Baptiste Semmartin was a professional fencer for 10 years before he became a vigneron.
    Jean-Baptiste Semmartin aka Domaine Lajibe has made wine in Bordeaux, Collioure and Burgundy, where he was under the wing of Emmanuel Giboulot. Being a leader in Biodynamic viticulture, Giboulout provided the inspiration for Semmartin’s wines we see today. Domaine Lajibe is at the foot of the Pyrenees and home to varietals such as Gros Manseng, Petit Manseng and Petit Courbu. A blend of biodynamic Gros Manseng and Petit Manseng, Serres-Seques is one of the sweeter wines that Semmartin creates. The vines are grown on an extremely steep slope, and quite poor soils that are riddled with rocks. Hence the name Serres-Seques, which translates to ‘dry ridge’. The flavours to be found in this wine are wild. Exotic fruits and spices, honey and tonnes of minerality. Despite the 100 grams of residual sugar, it is supremely balanced and fresh. That perfect amount of sugar and acid. Dangerously addictive.
