    The infamous Shays Flat Vineyard - Altitude 350m. Planted yearly 2000s. NASAA Certified Organic. The fruit is handpicked and then de-stemmed. Fermented wild. Basket Pressed. Aged 10 months on fine lees in steel and old oak. Malolactic fermentation complete. Bottled unfined, unfiltered, zero additives and preservatives. Clear Ruby. Black cherry juice, dried petals, humus. Silky.
