2023 Gone Swimming Pét Nat

Notes from the Wilkie fam:
Pretty serious for a Pét Nat. It’s a bright cool-climate wine with mouthwatering lemon and lime acidity. Heaps of grapefruit and a hint of nutty nougat from the fermentation in old French oak. Only 600 bottles made. Early handpicked Semillon and Sauvignon Blanc were pressed together for a co-ferment in neutral French oak. The complete malolactic fermentation smoothed out the tart malic acid then the wine was bottled unfiltered and unfined, and remained non-disgorged.
