Handpicked and carefully destemmed to an open fermenter in early March. Wild ferment commenced and the wine was dry a week later. We pressed to two neutral 500L french oak puncheons and sulfured after malolactic was complete. The wine was bottled at the end of October. After 5 years of making rosé from this fruit the time had come to make a red wine as well. This variety is pure magic in McLaren Vale - light on its feet at 11.9% alc but such an array of dark sweet spices and bitter chocolate too.
