No herbicides or insecticides. 30% whole bunch, crushed fruit into open fermenter, plunged by hand twice daily for 7 days,  where wild fermentation took place. Pressed to pretty old oak. Definitely no oak influence. The oak use was for micro oxidation and elevage. The Pinot Noir spent 11 months in oak before bottling. The colour is light\/translucent rose colour, hinting at gentle handling. The nose is a lifted mix of rhubarb, cranberries, crushed violet petals, baking spice and a hint of cooked prune. Bright and aromatic!
