A style of rosé more commonly adorned by the Swiss, ‘Oeil-De-Perdrix’ (a Rosé, or otherwise known as a Grey wine) translates to the “eye of the partridge” in French. Handpicked from a single vineyard in Sonoma Coast. A field blend of 60% Chardonnay & 40% Pinot Noir were wholebunch pressed direct to old French barriques and co-fermented naturally. The resulting wine remained on full solids for 11 months before it was sent to bottle, unfined & unfiltered.
