NV Jilly Wine Co. White Wolf of Cumbria Red
A NV blend of Merlot, Shiraz and Tannat.
Handpicked early at 8 baumé, destemmed and wild fermented in stainless steel; the Shiraz and Merlot components from regional NSW in 2018 and 2019 make for a vibrant core displaying purity and an elegant perfume. The remainder of the wine is made up of approximately 18% Tannat from New England in 2017, which was fermented on skins for 10 months and remained on lees in neutral oak for 18 months, unsulphured, adding depth and structure to the final assemblage. Blended towards the end of 2020, the resulting wine was bottled unfined and unfiltered.
