NV Jean-Paul Ambre Pet Nat
Jean-Paul worked his first vintage in 2007 in Nuits Saint George, Burgundy.
He starting out picking grapes, but somehow ended up in the winery within a week. Notes from him - Pet nat with a twist. Macedon Ranges Chardonnay and Pinot Noir aged for 10 years in barriques without the addition of any sulfites. A little Riesling juice was added to restart the fermentation. The result, a wine with zingy acidity and a complexity matching any vintage champagne but without the sulfites. Flavours of peach, notes of hazelnuts and a hint of lemon peel.
