NV Chateau La Colombiere Colombulle
Just 30 mins north of Toulouse, some of France’s rarest vines are painstakingly nursed back from extinction by husband and wife team Diane and Philippe Cauvin. The first and perhaps the most significant change was to step up the effort to preserve these rare vines by farming Chateau La Colombiere biodynamically in 2006. Yields are low with an average of 37 hectoliters per hectares. Every biodynamic preparation is prepared and dynamised on site, with quite a focus placed on activating the life in the soils using weeds, cereals cover and ploughing. The grapes are hand harvested and hand sorted. They use a hands off winemaking technique as they consider the most effort needs to be used at the vineyard. This is a very elegant pet nat from 70 year old Négrette vines.
