MV Jilly Wine Co. Bolivia



Named after a small town in the New England region...
The Wine is a NV blend of 2019 & 2020 fruit. 2019 was handpicked and cofermented as 100% whole bunch in neutral oak. This produced an overtly tannic wine with little place amongst the Jilly offering. So, in 2020 Jared hand picked the same fruit, lean at 9 baumé, and wholebunch pressed separately to old oak - essentially making a white from red fruit. The final blend is approx 80% from 2020 and 20% from 2019. The resulting wine is a light and crunchy red. Wild fermented without correction nor adjustment, racked & settled a few times. Blended to bottle. Unfined and unfiltered.
