Notes from Luke Powell - This is a very unique blood sausage and a blend of what we think are the best qualities of different blood sausages. The mixture is quite coarse and “sausage like” rather than a poured traditional boudin noir, is has pork shoulder, steamed jowl, walnuts, currants, rice and a very festive seasoning of cinnamon and cloves. Wonderful as is, for breakfast or part of a composed dish.
