A 100% barrel-fermented and aged beer project with a mixed culture nurtured into existence from Malfroy’s Gold Wild Honey. The project is centered around exploring the brewing processes and utilising gathered ingredients from around Sydney and New South Wales. Thieves of Fire is a mixed culture beer with dried wild fennel pollen, fronds, and stalks conditioned in bottle with raw honey. Fennel mukhwas, sunshine and orange zest up front with pepper transitioning to graham cracker and woodsy, eucalypt honey.
