Le Pas Saint Martin 2021 Sous le Tilleul Rouge

100% Grolleau from 10 year old vines on shale/clay soils.
Grapes are hand harvested and undergo 6 days of carbonic maceration as whole berries. Malolactic fermentation follows alcoholic fermentation and the wine is aged in tank for approx 6 months before bottling. Light and refreshing with a nose of redcurrants and pepper spice with a slightly vegetal hint. On the palate, the wine reflects the nose but there's a complex savoury, mineral character that appears on the finish.
