The sugar cane farm is located at Redridge in QLD, just outside Bundaberg.
The property is certified biodynamic. The still was built from scratch, including its design and fabrication. The base is made through the spontaneous native fermentation of crushed sugarcane. This ferments with native yeast into sugar wine. It is then distilled into Rhum/rum agricole, which almost all is aged in barrels. Some spirit becomes gin, here the sugar wine is distilled with botanicals including juniper berries, lantana leaf and finger limes. Lantana is prevalent locally, and for the gin it is harvested from the property. Lantana was introduced into Australian gardens around 1840 for its flowers, it is uniquely and “Australian weed”.
