Fanatical farmer, zero adds in cellar, this is the variety grolleau. It took an hour, then whoosh, did it sing. Patience. Amazing perfume, stunning flavours, freshness, purity and this crispness to texture. It feels nourishing and digestible, a red wine tonic of crunchy, just ripe berry fruit, slate-like mineral notes, crystalline, refreshing acidity and this levity and vitality that can’t be beat.
