The grapes were crushed and destemmed and shortly after the wild fermentation kicked in. It remained on skins for 14 days before being pressed over Gewürztraminer skins, giving just a hit of floral aromatics to the wine. It was then matured for 10 months in oxidative vessels before bottling. It’s a skinsy Semillon.
