A very unique Pastis.
Star anise, liquorice, wild fennel, thyme, lemon balm and rosemary picked from the surrounding hills along with other spices, including cardamon, cinnamon and Himalayan long pepper for complexity. Serve it as an aperitif - over ice with one part Pastis and five parts water... Or as a digestive - straight or on the rocks.
