The cabernet is de-stemmed as soon as it arrives at the winery and then transferred straight to the press where it is slowly pressed over 4ish hours, and racked to old barrels \u0026amp; amphora (after being settled overnight) for fermentation. We have always aimed to have a long elevage on this wine, and this year the wine was bottled after 18 months in its vessels. The resulting wine is, for us, the best we've made yet. A full bodied rosé wine that sits very much in the gastronomic category. The wine is built around a core of ripe stone fruit with a myriad of spices and earthy characteristics very much a feature.
