Notes from Tony himself..:
This year we’ve used Glera from Hilltops NSW, grown on decomposed granite which over time has mixed with layers of red sand and clay blown over from central Australia. Cloudy undisgorged pet nat, a bit wild so make sure to chill it right down. Also, this is an undisgorged pet nat – this means there is a little sediment in the bottle and it may foam over when opening. To avoid this, please store upright, only open when it is very cold and have a glass ready to pour into right after opening.
