Nue is French for nude – just like this wine, made without commercial yeast, fining, filtering, and NO added sulphites. Single vineyard Ballarat Pinot Noir, handpicked, fermented using indigenous yeast and left on skins for 3 weeks, gently plunged twice daily. Aged in used French barriques for 6 months and then bottled. The result: an elegant, light wine with flavours of raspberries and a hint of autumn leaves. Can be served chilled.
