2022 Jus d'amour

Fruit is sourced from the famed Shay’s Flat vineyard (certified organic) nestled in the Landsborough Valley, Pyrenees. This wine is made up of three different picking dates with three different fermentation methods utilized. The first pick was early for a rosé base. I crushed the grapes by foot and left them to soak in their juice overnight, basket pressing them the next day. The second pick was two weeks later, for a little more development in the ripeness. The grapes were separated from their stems and left to ferment for five days before being basket pressed and transferred to seasoned oak for its winter rest. The third pick was for the ‘22 Shay’s Flat Grenache table red, seeing 25% whole bunch within a 10 day ferment. Only a small seasoning of this pick went into the final Jus d’amour blend. After 6 months rest in oak, the parts were assembled with a little sulphur and transferred to bottle, sans fining and filtering. This is a very very light red, perfect for the coming months festivities. Works well with a chill, so better grab a couple of bottles and fill your summer eskies.
