2021 Shay's Flat Cabernet Sauvignon

Fine claret from the one and only, Joshua Cooper.
Cabernet from a ridiculously picturesque site in the Pyrenees, Shay's Flat in Landsborough to be exact. Hand harvested and all destemmed. Extracted with a combination of pump overs, delestage and pigage before eventual basket pressing. Aged in a combination of old and new oak, then in stainless. Touch of sulphur at bottling. Bit more power in this than the other cuvees. Still incredibly layered and precise, with a graphite laden backbone to hold it all together. Sour cherry, aniseed and chocolate. Decant and enjoy.
