2021 Raisins Pur Aligoté Pét Nat
Notes from Terrason!
This is our fourth release Aligoté pet-nat. Pressed at around 11.5% Baumé. Natural ferment, no additions, few months on lees and then ready for spring. We use pied de cuve to get ferment starting within 24hrs, some in stainless steel and some in barrel. We are also pretty careful with reduction, just my opinion but I think heavy reduction is the killer of sparkling wine (love it in table wine), even more so with red grapes. It's a wine that shows the diversity of the grape variety but also its purity.
