First pick for acidic structure from north-facing hill on sandy loam and ironstone. Second for body and depth from south-facing hill on dark volcanic clay. De-stemmed and wild ferment in stainless. Manually basket pressed. Aged 8 months on lees in stainless. Malolactic fermentation complete. Bottled unfined, unfiltered, zero additives. Cherry juice, black olive, fine grip.
