2021 Noto 88 (720ml)
From a family run brewery Kazuma in Ishikawa on the Noto Peninsula, Noto 88 is big and bold yet extremely versatile.
Made from 100% Gohyakumangoku rice polished to just 88% there’s acid, there’s texture, its aromatic and layered yet very balanced with a dry and long finish. Kazuma made this for Sake Central in Hong Kong in collaboration with Elliot Faber and the brief was ‘a sake to go with pretty much anything’. Pair it with raw fish, ramen or Cacio e Pepe. Serve it cool or at room temperature. For the geeks, it’s JMNG and it’s goddamn delicious.
