Pinot Noir, from Gumeracha, Adelaide Hills planted on clay soils, quartz and schist. Mostly destemmed, fermented on skins for thirteen days then pressed to old french oak. Elegant yet brooding. Savoury yet fresh. Cherries topped with spices and alpine herbs. Think drinking a cherry negroni on top of mount everest.
