2021 Metcalfe Shiraz

Notes from Allevare:
Grown by Tim Sproal (Minim) at Metcalfe, 30% whole bunch, 50% de-stemmed, 20% cab mac for 3 weeks with minimal handling on the whole bunch batches. Pressed off to old hogsheads for 12 months before bottling with minimal sulphur. Dancing out of Gippsland here and why not. A modern take on the variety with a nice balance of juice and nervy bunchy backbone.
